Scaling Best Practices

  1. Scale by weight, not volume — weights are more accurate and don’t change with temperature
  2. Watch out for non-linear ingredients — stabilizers, emulsifiers, and cultures often don’t scale linearly at very large or very small batches
  3. Check equipment limits — ensure your scaled batch fits your vessel with adequate headspace
  4. Recalculate minimum agitation speeds — some mixtures require different mixing intensities at scale
